Peanut Butter Sweet Potato Soup


Ingredients

3 cups fresh peeled 1 ″ cubed sweet potatoes

½ cup raisins

½ cups dried plums

1 stick cinnamon

1 teaspoon salt

2 teaspoons peanut butter

2 cups vegetable stock

Topping:

1 cup shredded fresh sweet potato (optional)



Directions
Mix peanut butter and stock well, add cubed sweet potatoes, raisins, plums, cinnamon, peanut butter, salt and stock into a slow cooker simmer on high 2-3 hours or low 4-6 hour, mash into a soup with a potato masher for a chunky texture or use a blender for a smooth texture and garnish with the shredded sweet potatoes or croutons and serve warm.

The skin color of a sweet potato ranges from white to yellow, red, purple or orange-brown. The flesh also ranges in color from white to yellow, orange, or orange-red. Sweet Potatoes often mistakenly called yams are from the morning glory family.
