Golden Honey Cornbread

Perfect cornbread is tender and moist on the inside and golden brown on the outside. Serve with soups, stews, or cut off a piece and start eating on its own. Plan to make this cornbread recipe just before guests arrive so they can enjoy it hot. While delicious just as it is, this recipe can also accommodate all kinds of personal touches. Feel free to add some cheese, green onions, corn kernels, jalapeƱo peppers, cooked sausage, or any combination of these suggestions.

Golden Honey Cornbread

Easy-to-prepare honey cornbread

1 cup unbleached flour
1 cup cornmeal
1/4 cup honey
1 teaspoon baking soda
3/4 teaspoon table salt
1 cup plain nonfat yogurt
2 large eggs beaten

  1. Preheat oven to 400 degrees F.
  2. Lightly grease an 8x8 inch baking pan.
  3. In a large bowl, mix flour, cornmeal, sugar, soda and salt. Stir in yogurt and eggs. Do not over mix, stir only until well blended. Pour batter into prepared pan.
  4. Bake in preheated oven for 20 to 25 minutes, or until center of the bread springs back when gently pressed.
