Eggplant Ratatouille Recipe

French eggplant or aubergine is a popular ingredient used in ratatouille or stews. Ratatouille is a classic French regional vegetable stew classically containing tomatoes, eggplants, peppers, garlic, onions, greens, and herbs.

Quick and Easy Eggplant Ratatouille Recipe


Ingredients
2 cups kale finely shredded
1 cup mustard greens finely shredded
1 large sweet potato cubed
1 eggplant cubed
2 cups fresh okra, chopped
10 plum tomatoes, chopped
5 cups vegetable stock
Salt, black pepper and cayenne pepper to taste


Directions
Add all ingredients to a large pot except peanut butter and tomatoes. Bring to a boil, reduce to a simmer and cook for half an hour, or until the vegetables are tender. Add tomatoes and simmer for 10 minutes longer. Serve with white or brown rice or with boiled green plantains.
