Caribbean pumpkin is a fruit botanically eaten many different ways used in stews, side dishes, and baking. The taste is slightly sweet when ripe. Caribbean pumpkin is a good source of beta-carotene.

Roasted Caribbean Pumpkin Recipe


Ingredients
2 pounds Caribbean pumpkin or butternut squash
2 tablespoons olive oil
1 teaspoon of sea salt
1/2 teaspoon black pepper


Directions
Preheat oven to 475°F. Seed and peel pumpkin then cut into 3-inch medium pieces. Toss with oil and seasonings; place in large shallow heavy baking pans, spreading in 1 layer. Roast pumpkin turning over halfway through cooking, until tender and starting to caramelize, 35 to 45 minutes.
